Egg Zucchini

Ingredients

1 medium tortilla

2 eggs

1 tsp olive oil

½ tsp salt

Little pepper

½ tsp oregano

1 small pumpkin cut into very thin slices

1 small spring onion, finely chopped

2 slices of Valio Edam light cheese 17% fat

30g low-fat feta cheese

Chilli flakes (optional)

Guide

1 For baking in an air fryer or oven.

2 In a frying pan or in a baking pan (for air frying), add the olive oil and once hot, add the onion and zucchini. Cook until they are wilted.

3 On a plate, beat the eggs with the salt and pepper and oregano.

4 Finely chop the cheese and feta.

5 Place the tortilla on the baking sheet, then add the eggs, zucchini and onion, and top with the cheese and feta.

6 Bake at 175°C for 8 minutes.

7 Serve with the chilli flakes and extra onion!
