Tilsit cheese, also known simply as Tilsiter, is a semi-hard cheese with a pungent aroma and a distinctively strong flavor, originally from East Prussia, now part of Russia and Lithuania. It was created in the 19th century by Dutch immigrants trying to replicate their native cheeses but using the ingredients and conditions available to them at the time. This resulted in a unique cheese that was named after the town of Tilsit, where it was first made.
The texture of Tilsit cheese can range from medium firm to quite hard, depending on its age. It is typically pale yellow in color and may have small holes or cracks throughout. The flavor of Tilsit is slightly intense, often described as tangy, slightly salty, and earthy, with spicy undertones that increase with age.
Tilsit is versatile in the kitchen, used both in cooking and as a table cheese. It melts well, making it suitable for grilling and adding to sauces or casseroles. On a cheese board, Tilsit pairs wonderfully with fruits, dark bread, and strong mustards, and complements beer, fruity white wines, or robust reds perfectly.
