Stuffed sweet potatoes

Delicious stuffed sweet potatoes are great as a main course or a hearty side dish.
Ingredients
3 (approx. 1.4 kg) sweet potatoes
2 onions
2 garlic clove
170 g bacon
1 jar (170 g)black beans, ripe
150g Valio Quattro Formaggi
1/2-1 tsp salt
black pepper
1-2 tsp lime juice
15-20g chopped parsley
Guide
1 Wash the sweet potatoes and cut them in half lengthwise. Roast the sweet potatoes in the oven at 200 degrees for about 1 hour. The cooking time depends on the shape and size of the sweet potatoes.
2 While the sweet potatoes are cooking, peel and chop the onions and garlic cloves. Sauté the butter in a pan, then transfer to another bowl.
3 Fry the bacon in a pan until crispy. Add the bacon and rinsed and drained beans to the onions.
4 When the sweet potatoes are cooked, scoop the insides into the bacon and onion mixture, leaving the skins on the baking sheet. Add half of the grated cheese, spices, lime juice and chopped parsley to the mixture. Mix.
5 Spoon the mixture back into the crust and sprinkle the remaining grated cheese on top.
6 Bake in the oven for 10 - 15 minutes, until the cheese has melted and is slightly browned. Garnish with parsley.
7 Serve as a main course or as a side dish with chicken.
