Omelette Sushi Rolls

Τhis omelette-tortilla sushi it’s perfect as a light lunch or a fun, healthy snack made in under 10 minutes. Great for kids too—pack it in a lunchbox or on-the-go!

Ingredients

1 tortilla

3 eggs

2 slices Valio Edam 9%

salt

1 Crack the 3 eggs into a bowl. Add a pinch of salt and pepper, then whisk well with a fork or whisk.

2 Heat a non-stick pan over medium heat. Pour in the egg mixture and let it cook gently until the bottom is just set (but the top is still a little runny).

3 Place the tortilla directly on top of the semi-cooked omelette. Gently press it down so it sticks to the eggs.

4 Place the two slices of Valio Edam 9% cheese on top of the omelette.

5 Add anything else you like—e.g. sliced turkey.

6 Fold the tortilla into a roll while it's still in the pan and slice into small rolls, just like sushi.

7 Plate your tortilla-sushi bites with a spoonful of guacamole and some fresh vegetables of your choice.
