Cheese Salad with Fruits

A fresh salad of marinated red onion, lettuce, arugula, seasonal fruits, and Valio cheese, topped with toasted pecans and a homemade apple-vanilla syrup. Perfect as a light snack or buffet dish.

Ingredients

1 large red onion

150 ml oil

2 teaspoons lemon juice

150g iceberg lettuce

100g arugula leaves, kale or mixed sprouts

300g apple, nectarine or fresh plums

1/2 Valio Gouda Cheese

black pepper 

Apple-vanilla syrup

300ml Apple Juice

5g sugar

1 vanilla

Guide

Apple-vanilla syrup

1 Put the juice, sugar and split vanilla bean in a saucepan.
2 Cook uncovered for about 15 minutes or until the mixture starts to turn syrupy. Note: the syrup will thicken as it cools.
3 Let cool to room temperature. Remove the vanilla bean.

Salad

1 Peel and halve the red onion. Cut into thin slices. Transfer to a small bowl. Add the oil and lemon juice. Mix and let marinate.
2 Wash and dry the lettuce leaves and arugula. Tear the lettuce leaves. Spread them and the arugula on a flat plate.
3 Peel the fruit you are using if necessary and dice or slice it. Remove any seeds or stones.
4 Cut the cheese into sticks.
5 Season the onion mixture with black pepper and add the cooled vanilla syrup.
6 Layer all the ingredients on a bed of lettuce, finish with nuts.
7 Serve on a buffet table or as a snack, e.g. with baguette.
