Cheese pies, without phyllo pastry

Ingredients

500 g "farina" (flour that rises on its own)

3 eggs

150 g yogurt

4 tablespoons of olive oil and a bit more for shaping

3–4 tablespoons of milk

350 g feta cheese

4–5 tablespoons Valio quattro formaggi cheese

Optional: sesame seeds for sprinkling

Egg for brushing (optional)

Salt and pepper

Guide

1 In a bowl, crumble the feta, add the Valio quattro formaggi cheese and the lightly beaten eggs. Mix well and transfer the mixture to another bowl where you have already added the flour. Add the yogurt, olive oil, and milk.

2 Add a little salt and pepper.

3 Continue mixing with a spoon or by hand until the dough is well combined.

4 Line a baking tray with parchment paper.

5 Lightly oil your hands and shape the dough into balls about the size of a walnut or slightly larger. Place the cheese pies on the tray, leaving some space between them, as they will puff up during baking.

6 If desired, brush them with egg and sprinkle with sesame seeds.

7 Bake in a preheated oven with fan at 180°C for about 25 minutes. Bake them in two batches (you’ll get about 26–30 pieces, depending on the size you make them).

8 Let them cool slightly and enjoy.
