Eggplant Pizza

Eggplant pizzas are a delicious snack for dinner and parties. The juicy ripe eggplant works really well as a pizza base, and if you want, you can try pesto instead of tomato sauce!

Ingredients

1 eggplant

olive oil

touch salt

70g tomato sauce

150g Valio Quattro Formaggi cheese

6 mini plum tomatoes

1 tsp pizza seasoning

For topping

fresh basil

Guide

1 Cut the eggplant into thin slices of about one centimeter and place the slices on a baking sheet. Lubricate the eggplant slices with olive oil and put a pinch of salt on the surface of each slice. Bake in the oven at 225°C for 20 minutes.

2 Spread the tomato sauce, grated cheese and sliced mini plum tomatoes on the eggplants that have softened in the oven. Finish with pizza seasoning and put back in the oven for another 7 minutes.

3 Garnish the eggplant pizzas with fresh basil.
